Strawberry Topped Custard Pudding

Makes?8 servings?

1 cup self-raising flour1/2 tsp bicarbonate soda1 punnet (250 g) strawberries1 cup white sugar80 g unsalted butter, melted1 Tbs vanilla essence1/2 cup low (1%) fat milk1 egg1/2 cup low-fat thick custardPreheat oven to 180oC.Brush a 1.5 L ovenproof dish with butter.Combine flour, bicarbonate soda and sugar in a bowl.Whisk melted butter, vanilla essence, milk, custard and egg.Mix wet and dry ingredients.Spoon into prepared dish and top with the strawberries.Bake for 30 minutes or until a skewer stuck through the centre comes out clean and the top of the pudding looks like a cake.
