100 grams chorizo sausage1 large onion diced2 stalks celery thinly sliced2 crushed garlic cloves2 teaspoons fresh thyme, chopped1 teaspoon paprika2 diced tomatoes1 litre chicken stock800 g tinned cannellini beans, rinsedSea salt and ground black pepper to tasteGrill the chorizo for a few minutes until crisp. Drain on absorbent paper.Spray a non-stick fry pan add the chorizo, onion and celery to the pan and cook, stirring occasionally, until onions are softened.Add the garlic, thyme and paprika and cook, stirring, until you can smell the aromas;Add the tomatoes and cook for another minute.Add stock and bring to the boil, then reduce the heat and simmer, stirring occasionally, for 10 minutes.Add the beans and cook for another 5 minutes.Season with salt and pepper to your liking.
