250?g white rice4 boiled eggs, peeled and cooled 500 g cooked, peeled school prawns 1 clove garlic, crushed 1 large red onion, finely chopped 1 bunch shallots, finely chopped 2 red capsicums, finely chopped 2 cups low-fat mayonnaise 1/2 cup light sour creamBoil rice and set aside to cool.Combine ingredients together in a large bowl.Stir thoroughly so that ingredients are evenly distributed.
