Apple and blackberry muffins

Makes 12 muffins

2 cups plain white flour 1 cup wholemeal plain flour5 teaspoons baking powder 3 eggs 1 ? cups apple juice 1 ? (150 g) cups blackberries, fresh or frozen.Sift flour and baking powder into a bowl. Make a well in the centre.Lightly beat eggs. Add to dry ingredients.Add apple juice and blackberries. Mix quickly to just combine. Spray a 12 muffin trays lightly with cooking spray. Fill two-thirds of each muffin hole with the mixture. Bake at 190 C for 20 minutes, or until muffins spring back when lightly touched.

Tips
