20 large local Aussie green prawns (1 kg) 2 limes, halved 1 cup lime juice 2 tablespoons fish sauce 60 g unsalted butter, melted2 small red chillies1 teaspoon sugarMix the lime juice, butter, fish sauce, chillies and sugar in a large bowl. Peel and de-vein the prawns Add prawns to the marinade. Cook prawns for 2–3 minutes on the BBQ.
