400 g trim beef mince1 large egg1/2 cup?breadcrumbs1 medium brown onion, diced2 cloves garlic, crushed1/2 cup?pine nuts1/2?cup?finely cut spring onions1/4 cup finely cut coriander50 g low-fat tasty cheese, shredded?2 cubes?vegetable stockOlive oilPlace the vegetable stock in very little hot water to melt.Put the onion and garlic in a saucepan with some olive oil and cook until soft and brown.Add the pine nuts. Cook until lightly coloured.Place all the ingredients into a large mixing bowl and use your hands to mix.Shape the mixture into small balls about 3 cm in size.Place the meatballs on a plate, cover with cling wrap and place in the fridge for about 20 minutes.Add a small amount of olive oil onto a pan and cook the meatballs until golden brown.
